Our name draws inspiration from the Pennsylvania Dutch word for “coal” — a tribute to the region’s heritage and the elemental force behind our cooking.
At the heart of our kitchen is a Josper grill, fueled by wood coal and powered by fire. We cook with Quebracho — the “axe-breaker” — a dense, long-burning charcoal that burns hot and clean. It brings intense heat, steady flame, and unmistakable flavor to everything we do.
We focus on prime cuts, seasoned simply with salt and pepper, then cooked powerfully over fire. Alongside our steaks, you’ll find seafood and seasonal dishes that change often — so what you see here is just a glimpse of what might be on your plate.
