Our name comes from the Pennsylvania Dutch word for “coal,” a nod to the region’s heritage and to the elemental force behind everything we do.
Kole was built on a simple idea: real fire, great beef, and hospitality that feels like home.
We are not chasing white tablecloth luxury. We are here for something simpler and more grounded: honest beef cooked over live fire, served with warmth, and rooted in the place we call home. We are a neighborhood chophouse in the heart of Lancaster.
Great beef starts long before it hits the grill. It begins with the farmers and ranchers who raise cattle the right way, protecting land, caring for their herds, and treating agriculture as the craft it is. Those are the people we partner with, and the stories we share.
We keep things simple. Every steak starts with salt, pepper, and real respect for the beef. No marinades, no tricks, nothing to hide behind. Just honest seasoning that lets the meat speak for itself.
Our Josper grill is the soul of the restaurant. Fueled by wood charcoal and open flame, it gives each steak its final touches before it reaches the plate. We step aside and let the fire do what it does best, and when the ingredients are this good, they do not need anything else.
Good beef. Good fire. Good people.
That is the whole point.
