At KōLE, our name is inspired by the Pennsylvania Dutch dialect for “coal,” honoring the region’s deep-rooted heritage. Fueled by wood coal, our Josper grill delivers the intense heat and bold flavors that define our steaks. We cook with Quebracho charcoal—known as the “axe-breaker” for its unmatched burn time and clean fire—infusing every cut and chop with tradition and mastery. More than just a name, KōLE represents the very element that ignites our fire, both in the kitchen and in our passion for live-fire cooking.
